Why this listing means a lot to us
Holland & Barrett has been trading since 1870. That is 156 years of selling health food on British high streets, through several changes of ownership and a full century before the phrase "wellness" meant anything to anybody. For a lot of people in this country, it is simply where you go when you want something better than the supermarket aisle.
Zilch has been trading since October 2025. Going from a standing start to a listing with a name like that, in under a year, is not something we take lightly. Retailers of that age do not add products casually, and being assessed on our own terms and accepted was a genuinely nervous moment for a small Edinburgh team.

What you are actually buying
If this is your first time meeting us, here is the short version. Zilch is a gentle water infusion of monk fruit, known technically as a decoction, dried into a powder with a soluble tapioca fibre carrier. It is whole-fruit derived rather than an isolated mogroside extract, which is a different thing from most of what sits near it on shelf.
The practical points:
- No erythritol and no sugar alcohols. Erythritol solves the bulk problem neatly, but it brings a cooling mouthfeel, label confusion about how much monk fruit is really in the pouch, and digestive discomfort for some people. We went with soluble tapioca fibre instead.
- About 3× sweeter than sugar. A decoction is far less concentrated than a purified extract, so you are not dealing with the tiny, hard-to-judge doses that extracts demand.
- High in fibre, with no added sugar and no artificial additives.
- Negligible calorie and glycaemic impact at typical serving sizes. You only need a little, and that is what keeps those numbers where they are.
The honest limitation: Zilch is not a cup-for-cup baking sugar. It does not caramelise, and it does not add bulk or moisture the way sugar does. In cakes you generally adjust the recipe rather than swapping one for one. Where it does its best work is hot drinks, yoghurt and porridge, smoothies, and sharpening up fruit sauces and dressings.
